Spanning 14 hectares in the Huila region, the Las Flores farm has grown from the 18,000 trees planted in 1990 by the Vergara family matriarch to 90,000 today. In

2006 Las Flores participated in the Cup of Excellence, marking the beginning of a journey into the world of specialty and differentiated coffees. Today, Edilberto Vergara and his son Johan are devoted to refining their processes to focus on quality of cup. All the coffee at Las Flores is handpicked and naturally dried to ensure consistency in quality. Different fermentation techniques such as oxidation followed by anaerobic process and fermentation in bags is used to create unique flavour profiles.

The Acevedo district of Wira is famous for its Pink Bourbon production. Young Jhoan, the second generation plantation owner, has been experimenting with new varieties and refining methods, mainly of Pink Bourbon. His father’s farm was mainly Castillo and Colombian, but since Jhoan started planting Pink Bourbon on part of the farm, he has expanded the area with new varieties such as Geisha, Chiloso, Tabi. He has been actively studying fermentation with cherry yeast and conducting trial production in cooperation with a local coffee research institute, and with the results steadily accumulating, his coffee is steadily spreading to the world, with many inquiries from top baristas overseas.

1. Harvesting and Sorting
