El Diviso is a family-run farm established approximately 30 years ago by José Uribe Lasso. To escape the conflict in Nariño Department, he relocated to the Burceras district of Pitarito, Huila Department, where he cleared the land and established the farm. Later, his sons, Nestor and Adrian—who had been familiar with coffee since childhood-took over the farm and shifted its focus to specialty coffee production. They studied the theory behind specialty coffee cultivation, processing, quality control, and sensory evaluation at SENA (Servicio Nacional de Aprendizaje), a vocational training institution provided by the Colombian government, and are applying this knowledge to improve the farm’ s quality.

In 2024, we roasted the Geisha variety. This year, we’d like to introduce a variety we’ve long wanted to roast: Ombrigon.

The exact origin of Ombrigon is still unclear, but it is believed to have originated in the Huila department of Colombia. “Ombrigon” means “navel” in Spanish, a name derived from the bean’ s unique shape-elongated with a central indentation. It is believed that this variety has roots in Ethiopian heirloom varieties and is said to have developed characteristics similar to those of native Colombian varieties through natural mutation. For this reason, varieties such as Pacamara, Caturra, Bourbon, and Castillo are cited as potential parent candidates.

Although this is a natural process, it involves intense anaerobic fermentation and utilizes the thermal shock method, which leverages temperature differences, so it’ s difficult to call it a pure natural process.

After harvest, the cherries are first washed with hypochlorous acid, then undergo a 48-hour oxidation process at 30-40° C. They are then washed again with 32° C warm water and undergo 24 hours of anaerobic fermentation. Furthermore, after a final wash in 60° C water, the cherries are dried on African beds to maximize flavor extraction. While tasting notes mentioned raspberry, guava, mango, and white chocolate, it actually had a flavor reminiscent of Dr. Pepper.

The key point is that Ombligon has high yields and resistance to certain diseases, so production is likely to expand in the coming years.
