デイリーユースにはぴったりなコーヒーだと思います。ライムやすだち系のシトラスフレーバーだけだと酸が強調されますが、このトリマは口当たりが良くて飲みやすい。何が起因しているのかを考えてて浮かんだのが、バニラとキャラメルでした。シャーベットというよりもイタリアンジェラートの感覚かなと思っています。

精製方法 / フリーウォッシュドTolima Gaitania is an Organic certified Excelso grade coffee from the ASCI’SP Cooperative. This cooperative exists to honour and assist the Nasa people, who are indigenous to the land.
This group of people are known as the Páez indigenous group or the Nasa We’sx tribe, who originates from southern Cauca. They were brought to Planadas at the southern end of Tolima by the Colombian Army in the early 1900’s, to work in the gold mines.
After independence, they stayed in the area and became coffee farmers.
The Gaitania area is also famous for being the birthplace of a rebel army, FARC (Revolutionary Armed Forces of Colombia). While Colombia has recently signed a peace accord with this rebel force, the Nasa people of this region fought for peace to maintain their land and have held it for over 20 years.
The strength of these people has bore incredible coffee for generations.
Today, they’re part of the Asociación de Caficultores Indígenas de San Pedro (ASISP), high in Gaitania, South Tolima. All 150 members (88 women and 66 men) manage their plantations under organic standards that are in line with the ancient principles of their tribes.
Currently, the group is also working with members (some of whom have produced microlots scoring 87 and higher on the SCAA chart) on further improving their drying practices.
The Nasa people have great respect for the land they inhabit and cultivate everything organically, leaving as much native flora intact as possible as a matter of principal. ASISP has helped coffee growers on the reserve to improve agricultural practices and maintain organic and fair-trade certifications. These members would have been unable to access all of this independently.
Their certified organic coffee growers reduce the contamination of soils and water resources as well as protecting the health of their end consumers.
Farmers are trained to select only the ripe fruit and standardize pulping, fermenting, washing and drying processes to obtain consistent results.
